SAGUENAY, Que. — Divers will return to the Saguenay Fjord today to resume the search for a sunken treasure of cheddar cheese that’s been ripening in barrels for the last year as part of an experiment by a local cheese company.
Divers were guided to the likely location of the 800 kilograms of cheese by sonar operated from a boat on the surface.
The cheese has been stored for the last year at 50 metres below the water’s surface to test a new ripening technique developed by Fromagerie Boivin, a regional cheese company.
But a first day of search on Thursday failed to locate the catch.
‘‘We know that we will find it,’’ said Luc Boivin, vice-president of the company.
‘‘We have several GPS (global positioning system) locations to check.’’
The Canadian Food Inspection Agency warned the company not to commercialize its underwater-processed cheese.
